If I had to pick one word to describe our summer so far, it would be “wet.” There has been a lot of rain here in the past few weeks — so much so that we are taking detours because roads are still closed due to flooding. Mother Nature may have washed out the roads, but I was not about to let our first weeks of summer be a complete washout, too. This week we decided it was time to take matters into our own hands.
With no sunshine, we decided to make our own Funshine. My daughter loves rainbows and while we haven’t seen any of those, we decided the next best thing would be Skittles®, a rainbow of fruit flavors. A box of candy wasn’t going to do it, though. We needed more, much more, so we decided to throw a full blown summer dessert party.
All the roads to Walmart were open, so we headed there to see what sounded good. We ended up with this dessert party menu:
– Flower Cupcakes (vanilla decorated with Skittles to look like flowers)
– M&M’s® Cookie Ice Cream Sandwiches
– SNICKERS® Ice Cream Bars
– Dr Pepper® Cherry Floats
It was nicely balanced with a little fruity, a little chocolate, some cold items but not all, and all of them fun, festive, and summery.

Share a Little Funshine Sweepstakes
I’m a fan of the idea “Summertime and the livin’ is easy” and that includes these desserts. Because we’ve been rather on top of each other with a lot of time in the house, my kiddo was in need of a project that she could manage solo. That meant coming up with something that would be simple enough for my daughter to do on her own with minimal supervision. The solution: Flower Cupcakes.
We whipped up some vanilla cupcakes from a box mix according to the directions and frosted them with white icing. (She thought that white would make the colors of the Skittles really stand out and I thought that seemed like a good approach.)
We opted to make this our fruity item and so used Skittles as well as some Life Savers® Hard Candy. The colors alone were enough to brighten our moods.
I set them out and let her imagination take over. She took her time playing with color combinations and different kind of “flower” shapes. This one was my favorite:
But I thought they all turned out great. While the tulips didn’t quite match the vision in her head, they didn’t have to be perfect. Taking the stress off to just have fun playing with food made it far more fun for her. They were all lovely and also really delicious. Best of all, she was proud of them.
Sometimes I have trouble finding just what I need at Walmart and while the frozen food is pretty obvious, here’s some help finding the Skittles:
With the cupcakes done and the frozen treats ready to roll, all that was left was something fun to wash them down. Cue the Dr. Pepper Cherry Floats! These were so yummy and you make them just like a root beer float, but use Dr. Pepper Cherry. I did put a maraschino cherry in the bottom under the ice cream so that there was a surprise left when the drink was finished.
This was our first time making this summer taste treat. My husband is a big root beer float fan and I wasn’t sure how these would go over. You could have knocked me over when he announced, “These may be even better than root beer floats.” Looks like we’ve got a new summer favorite!
