Note: We had previously tried making the key lime cookies from the cake mix. It didn’t turn out so well. Stick with the cupcake version, my friends.<\/em><\/p>\n Unfortunately, what isn’t as good is the key lime frosting that accompanies it. It tasted like a whole lot of chemicals. Not my thing We made our own creation and ended up with something easy but a bit more like key lime pie.<\/p>\n 1. Make the cupcakes<\/strong> according to the box directions. (Sorry, my kid never listens to this, so the admonition comes in one breath: “letthemcoolallthewayreallyimeanit”)<\/p>\n 2. Top them with whipped cream.<\/strong><\/p>\n If you want to make your own whipped cream, go for it. If you want to use Cool Whip, I will high five you, tell you that’s what I did and that it turned out great. If you want to use Ready Whip or some other fun out of a can whipped cream, know that your kids will high five you. I’ve used it for one batch – big fan, but remember that it collapses pretty quickly. If you need to make more than 5 minutes prior to serving, go with something else.<\/p>\n My tween and her friend decided on their own to add lime juice to the whipped cream. They learned a lesson about curdling.<\/p>\n Not so attractive but they ate them anyway. And yes, when you have a tween girl in the house, somehow that also means having zebra print cupcake liners.<\/p>\n 3. Sprinkle on graham cracker crumbs.<\/strong><\/p>\n It’s like an upside down key lime pie.<\/p>\n Note: I went to buy graham crackers with the intention of crushing them on my own. Then I saw the box of graham cracker crumbs sitting on the shelf. They were on sale and worked out being the same price per ounce as the whole graham crackers. Score! I’m a big believer in taking help where I can get it.<\/p>\n 4.
