It’s rich and creamy but made without cream, so it’s healthy, too.
My corn chowder recipe has a secret ingredient for color: turmeric. It’s an all-natural way to make your soup a beautiful golden color. I find that just a little is enough to give it a lovely color boost without adding much flavor. If you want to spice it up, however, go for it and add as much turmeric as you like.
Easy Corn Chowder Recipe
If you have a little one learning shapes, you can use chives as both a garnish and a teaching tool.  You can use them to make letters. This certainly gives new meaning to alphabet soup.

Easy Corn Chowder Recipe Ingredients
3 cups frozen whole kernel corn (or 6 ears of fresh corn,with kernels cut off the cobs)
1/2 cup chopped onion (1 medium)
1 tablespoon cooking oil
1 14-ounce can chicken broth (vegetable broth is fine, too)
1 cup cubed, peeled potato (1 medium)
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 cups milk
1/2 teaspoon turmeric (a little can go a long way, so add in small doses until desired color/taste is achieved)

  1. In a large saucepan cook onion in hot oil until onion is tender but not brown. Stir in chicken broth, potato, and corn. Bring to boiling; reduce heat. Simmer, covered, for 10 to 15 minutes or until vegetables are tender, stirring occasionally.
  2. In a small bowl combine flour, salt, and pepper. Stir milk into flour mixture; add to corn mixture in saucepan. Cook and stir until slightly thickened and bubbly. Cook and stir for 1 minute more. Add turmeric; heat through.
  3. You can serve as is, but I like to run through it with my hand blender for a smoother, creamier consistency. If desired, garnish each serving with chives in a fun shape parsley.

Serves 4. (Some say 6, but I think those are awfully tiny servings, so I’m going with 4.)

Variations

This is delicious topped with cooked, crumbled bacon if you’re wanting some meat. Better yet, cook your bacon first and then sautee the onion in the bacon fat. So good.

You can also make with 1/2 cup chopped green sweet pepper adding at the same you sautee the onion.

Consider adding in some crab meat. You’d be surprised at how good the canned crab, drained and flake, tastes in this soup.

As for the garnish, the possibilities are pretty endless. You can use chives for all sorts of things, perhaps working on counting, or even make tic-tac-toe board if you really want to play with your food. To keep it educational, use them to make different shapes on top.

It’s true, and I have the spicy lentil soup recipe to prove it. For the record, no, I never thoughts those two things would go together, either, but they do.

What led to that decision when I was in my early twenties is a story novel for another day, but the important thing here is that my dear college girlfriends gave me a very lovely wedding gift – a book full of recipes from their families, interspersed with lots of photos from our college days. My friends were scattered across the country but whenever I opened that recipe book, it was like they were in the kitchen with me.

I still have that book and continue to use it often. It has accompanied me to four different residences, and those girls and their recipes have been with me through thick and thin. The friendships have lasted well beyond my first marriage and have seen me into my current very happy marriage. (Second time’s the charm!)

Here’s the book, and thankfully there’s a page without a photo evidencing my extremely questionable fashion sense in college. (Though admit it, overalls were pretty comfy. Okay, you’re right, no excuse. But my friends loved me anyway, thank goodness.)

FullSizeRender-55One of the recipes in the book is from my dear friend Rae of Books for Mom. She tells me that she tweaked it from one she had seen in Cooking Light about 15 years ago. It’s warm and comforting, much like Rae herself.

Spicy Lentil Soup Recipe

1 T. olive oil
3 cloves garlic, minced
1 can of fat-free chicken broth (you can also use vegetable broth)
1/2 lb of dried lentils, rinsed and sorted*
1 can of diced tomatoes
1 t. paprika
1 t. cumin
1/2 t. crushed red pepper (more if you like it spicier)
water

spicylentilsoupingredientsIn a large pot, saute the garlic in olive oil until lightly browned and then add broth, tomatoes, lentils, spices, and 1 can water. Simmer until the lentils are on the point of disintegration (depends on lentils, for whole lentils around 90-120 minutes), replenishing water as needed.

spicylentilsouponstoveYou can serve it as it is after that, but it’s a bit chunky. If you like it that way, great (but read this post should you think it is wise to criticize your hostess’ preference on the subject.) I like it a bit smoother so I use an immersion blender (also known as a stick blender or a hand blender). You can make it perfectly smooth if you like, but I usually go somewhere in the middle.

Note: I’m not a huge fan of spicy food, so I go light on the crushed red pepper and allow my husband, the spicy guy, to add as much as he likes to his bowl. That’s why we have the ginormous bottle of crushed red pepper flake you see in the photo above. Another option to kick up the heat is to use hot pepper olive oil (Trader Joe’s has some) and drizzle a little on top.

This recipe serves 2. It also freezes well, so I typically double it. It’s the perfect simple winter supper with warm bread.
