They are sure to make your breakfast fun and festive.

1. Cook your favorite kind of breakfast sausage links. We are suckers for the maple syrup sausage – so good! (You can make these ahead of time, or you can get them started and let them cook while you get started on the pancakes.)

2. Make pancakes. You can use your favorite mix, or this basic pancake recipe from Martha Stewart that I used when realizing we were out of pancake mix. Make the pancakes in the usual circle shape and just before flipping, add two chocolate chips for eyes. Put them in with the flat side facing out.

3. When pancakes are finished, all you have to do is assemble. Place sausage as antlers. I cut the sausage links in half length wise so that they would lay flat, and you can cut even smaller pieces for the tips of the antlers.

4. Use a maraschino cherry for a nose. A raspberry also does the trick.

That’s it! Cute and easy. And no, they likely won’t be perfect, as my picture clearly shows, but they don’t have to be. They’re fun, and they’re going to be eaten pretty quickly, so no worries.

Breakfast is my favorite meal of the day, hands down. I’m convinced that a great breakfast is the perfect start to a great day. As much as I love it, though, I don’t always have a ton of time to spend in the kitchen on busy mornings, especially on hectic school and work days. I’m always on the look out for ways to make breakfast fun and special, but also quick and easy. Not a simple task, but thankfully, Quaker® Real Medleys® Yogurt Cups fit the bill.

By simply adding cold milk, the dry ingredients transform into a tasty yogurt treat! It’s a bit of breakfast magic, and who doesn’t need that? The fact that they are a delicious blend of yogurt and multigrain granola with real fruit and crunchy nuts makes my family’s taste buds happy. That they are satisfying with 25 grams of whole grains and 10 grams of protein with 1/2 cup of cold skim milk makes the mom in me happy.

Flavors include: Strawberry Almond, Apple Cinnamon, and Raspberry Pecan.

My husband opted for the Strawberry Almond, and my daughter wanted to try the Apple Cinnamon. It was really convenient – we simply added cold milk & stirred. (Note: The milk must be cold. It won’t work with warm milk.) This is the first shelf-stable convergence of granola, fruit and yogurt – all in a single serve cup! I’ve seen nothing like this before.

When I asked them to describe it after a few bites and I heard, “Crunchy.” “Cool.” and “Yum!”

You will find this product in either the cold or ready-to-eat cereal aisles. I picked up ours on a recent school supply run to Walmart. If you are headed to your Walmart, you may be able to check out a demo of this fun product. Find the list of demos here.

PicMonkey Collage-1I also find that making items ahead of time can streamline the morning rush, so I whipped up some chocolate chip muffins, which were a sweet treat to go with the yogurt cups.

Chocolate Chip Muffin Recipe

Ingredients

1 cup all-purpose flour

1 cup whole wheat flour

1/2 teaspoon salt

1/4 cup granulated sugar

1 teaspoon ground cinnamon

1/2 cup (1 stick)unsalted butter, melted and cooled

2/3 cup firmly packed light brown sugar

2 large eggs

1 teaspoon pure vanilla extract

1 cup whole or lowfat milk (I used 2%)

1 cup semisweet chocolate chips

Directions

1. Preheat the oven to 375 degrees. Line a 12-cup muffin tin with paper lines or coat with cooking spray.

2. Combine the flour, baking powder, and salt in a medium mixing bowl. Combine the granulated sugar and cinnamon in a small bowl.

3. Whisk together the cooled melted butter, brown sugar, eggs, vanilla, and milk in a lare mixing bowl.  With a wooden spoon, stir in the flower mixture until just combined. Then add chocolate chips.

4. Fill each muffin cup approximately 3/4 full. Sprinkle cinnamon sugar mixture on top (approximately a teaspoon).

5. Bake the muffins until they are golden and toothpick inserted into the center comes out clean, 22-25 minutes.

6. Allow muffins to cool in pan for 5 minutes, then complete cooling on a wire rack.

These muffins are not only so good, they freeze well and will last for around a month.

Where to find the best quick breakfast items in Epcot http://betweenusparents.com/best-breakfast-items-in-epcot/ http://betweenusparents.com/best-breakfast-items-in-epcot/#comments Tue, 04 Aug 2015 22:55:38 +0000 http://momfactually.com/?p=2513 EPCOT stands for Experimental Prototype Community of Tomorrow, and it’s a pretty amazing place to visit today. Many families I know don’t even make it to Epcot when they’re visiting Walt Disney World, and that makes me sad because I think it’s an amazing park with lots of opportunities for both fun and education for all ages.

Epcot is divided into two parts: Future World, which is home to attractions like Test Track, The Seas with Nemo and Soarin’, and the World Showcase, which features 11 different countries. There’s a lot to see and do, but you can’t do it without fueling up first, so I’m sharing my both my favorite breakfast items in Epcot.

Breakfast is the most important meal of the day. So where to go? Check out this video to see three different quick breakfast spots that have the best breakfast items in Epcot. (Please note: this is for quick service breakfasts. If you have time, breakfast at Akershus Royal Banquet Hall with the princess is lovely, and delicious. It’s possible that they brought us an entire extra tray of delicious bacon when we were there in January, thus earning our undying gratitude and appreciation.)

If I had to pick a favorite quick and easy location for breakfast, I’d say Les Halles Bounlangerie-Patisserie in France. Les Halles in the France Pavilion opens before the rest of the World Showcase opens. Just tell the staff that you want to go have breakfast there and they’ll let you into the World Showcase. Not everyone knows that it’s open, and not many people head there first thing, so it’s not very crowded, as you saw in the video. It’s a chance to really take in the beauty of the area and enjoy a lovely start to the day.

I’m a sucker for a fabulous croissant and a pain au chocolate, while perhaps not intended as a breakfast food, is a perfect way to start a vacation day in my book. I also love that they have some items with more protein, like Croissant Jambon Fromage (ham and cheese croissant) and quiche.

The French pavilion is also a very convenient breakfast option if you are using the back entrance to Epcot if you are staying at the Beach Club, Yacht Club and Boardwalk resorts. France also has some pretty fantastic coffee if you need the caffeine. (Thought there is also a Starbucks in Future World if you can’t make it that far.)

I really wish I was going during Food and Wine Festival time so I could check out the Parisian Breakfast at Chefs de France. The Disney website says of the breakfast buffet option, “Bubble away with mimosa, tuck into just-baked baguettes, rich brioches and golden croissants.” Sounds amazing, doesn’t it? I wish they would offer it year-round and not just during Food and Wine.

Of course, if a croissant doughnut at Port Refreshment is more your style, I’m not about to judge. And if you want to hit Sunshine Seasons to stay close to the rides in Future World, you can find the menu, with items like croissant berry pudding, french toast and a breakfast panini, here.
